The Anti-Inflammatory Diet: What I Ate, Part 2

Remember that time I wrote a whole post about all the anti-inflammatory-diet-friendly food I ate in one day?

Well, here we go again!

I apologize in advance that I write a lot about food... in Little Happies posts, in travel posts, and especially in these "What I Ate" posts. Seriously, I should rename my blog Blessed to Be Eating or something.

And now for some LIVE ACTION news. Here's what I ate TODAY!

Drinks
Water, water, water
Grapefruit sage kombucha


I don't always like kombucha. It usually tastes like salty armpit to me. But someone recommended this exact make and model (errr, brand and flavor) online a few days ago. And it was on sale. And I was thirsty. So I went for it. It was actually quite delicious! Now, perhaps one of you could explain to me why kombucha's good for me?


Breakfast
Smoothie
(almond milk + coconut milk (from the can!) + blueberries + fresh lime juice + honey + ice)



Lunch
Black bean and sweet potato enchilada + avocado slices
(I would have showed you the whole thing, but forgot to take a picture until this point. It was that good.)


Watermelon
Cherries



Snacks
Nachos
Salpica cilantro green olive salsa


Alright, so these nachos were probably my biggest fail of the day. I can't seem to quit you, dairy. Especially cheese. This hunk of leftover monterey jack was just chilling all lonely in the fridge, so I did the nice thing and made nachos out of it. Plus, I had to try out the new salsa I bought. (It was amazing.) At least I didn't go too crazy on the cheese, right? Sorta win?

    I've tried and failed on kombucha too. I know it's supposed to be good for me. I just can't get past the salty armpit part. Then again, I'm all about blaming my genes recently for my food dislikes (I'm looking at you, brussel sprouts!)

    It sounds like you're doing ok. I might recommend increasing your avocado intake by 400-500%. But that's just because I don't want to be the only one stuffing my face with avocados over here. Um, look away. Also - cherries. Keep up the good work! :)

    1. YES, salty armpit! I'm glad you taste it too! Phew! I'm not going crazy. But seriously, the kind I had yesterday didn't taste like that at all. It was wonderful!

      I lovvvve that quinoa tabbouleh! I've made it a bunch of times now. Actually, the recipe came from a great gluten-free cookbook my SIL got me for Christmas. A wonderful gift!

      Ummmm, don't think anyone will ever match you in the avocado department. :P I'm willing to up my intake though, and my cherry intake too. MMMM! Good stuff.

  2. Kombucha is good for you because it is full of probiotics ;-) its a fermented tea and things that are fermented are good for you (except beer yuck!) Ive made some at home its neat because you can use whatever teas you like and then make a kombucha soda with it I havent done the soda part but have done the tea it was alright not great but all right that black bean and sweet potato enchilada looks amazing I might put that on the meal plan!

    1. Me too! I love reading what other people are eating. I think the whole bloggosphere should do "What I Ate" posts, whether or not they're anti-inflamm. I just love seeing food. Haha!

      It lasts FOREVERRRRR since it makes 16 enchiladas. We eat it for four nights straight! I even tried freezing some this time around. We'll see if they reheat well!

  7. You made the enchiladas!! How did they compare to your previous ones that had tomatoes?? I need to know!! (although the recipe you used is easily my favorite food these days...we're making it this week!)

    1. They were SO good!! I think next time I'll cut back on the cumin as the flavor overpowered the dish. BUT perhaps it's because we have very potent cumin. Ha! Who knows? Do you use cumin? I noticed it was optional in the green sauce, so just curious what you do. Otherwise, it was fantastic! (I may have also smothered it in cheese.)
