John Paul Turns 3! With a Train Birthday!

My big kid turned 3 back in May.

What a gift it is to have a 3-year-old!



John Paul Fulton, watching you grow is such a joy. You have become such a chatter box, telling us stories about any and everything, and talking to anyone who will listen. You're favorite story to tell these days is, "When I was a baby, I used to call 'chocolate' 'lala'!" . . . which is entirely untrue, but I love how much you love making up stories about when you were a baby.


You love to explore the world around you, taking in every detail possible. You'll be telling us about something you saw weeks ago, and you'll recall the most random detail about it. It always shocks us and makes us chuckle. 


You still love books, and would curl up on the couch to read with us all day if we had the time. Your favorite books are the ones with vehicles, but you'll even give non-vehicle books a go from time to time.


Your eating habits have remained pretty much the same over the past year. If it were up to you, you'd only eat pasta, grilled cheese, or pizza every meal. We've gotten you to try a handful of less toddler-friendly foods, like tofu and kale and carrots, but you'll only eat them if there's nothing else around. You have quite the sweet tooth, which we don't indulge often, but I do use it to my advantage when I'm trying to get you to cooperate with pictures. (Candy bribery, ftw!) No wonder I have so many great pictures of you!



You have such a big heart and it always warms mine to see your love in action. When Jude gets hurt, you rush to his side to give him a hug and tell him, "It's ok to cry!" When you see a baby, you just want to hang out nearby and talk about how cute and little the baby is. When you wake up in the morning, your favorite thing is to climb into our bed and snuggle for a while. You'll often ask us how our sleep was and tell us that you love us. You're such a snuggly, sweet boy.



You love water! Whether in the bath, or the water table, or just playing in the sink, you gravitate toward anything involving H2O. And so long as we're not actually trying to clean you with it, you are giddy whenever water is around. You especially love cups in water because you get to practice pouring, over and over and over.



You also love to ride your bike. You mastered your tricycle as a 2-year-old and moved onto your balance bike pretty quickly from there. Now you zip around on your green balance bike with the greatest of ease. It always shocks me to see how quickly you can ride, and how much control you maintain. I wonder if it's time for an upgrade to a petal bike? For now, you're having fun also learning how to maneuver a scooter. And man, can you motor on that too!



You LOVE family. When we're not around your grandparents, aunts, uncles, and cousins, you're constantly talking about them. My favorite is when you're enjoying something like a toy or a meal and you stop to say, "Nana would love this!" It's such a blessing to have John's family nearby. And even though my family is far, we FaceTime often and they visit when they can. And it's a good thing, because this boy sure loves his Rhode Island family too!



You are still a pro-sleeper, and we sure do appreciate that. You take one nap, from around 1pm to 3pm, and you sleep through the night from 9pm to 7:30am. You still sleep in your pack n play (lol), but you love it and we're not going to rock that boat if we don't have to. You are, however, welcome to sleep in that big boy bed we bought you (over a year ago!) whenever you're ready. :P We started using the OK to Wake clock a few months ago and it's helped you stay in bed in the mornings until a reasonable time. The clock turns green (at a time we preset) when it's ok to be up, and you have adjusted to it really nicely! Thanks for letting us "sleep in" 'til 7:30am every morning, kiddo.



One huge accomplishment in the past few months has been POTTY TRAINING! We officially have you out of diapers during waking time, and it's so nice! You still haven't learned how to hold while you're napping or overnight sleeping, so we put you in diapers for sleep, and you've managed to hold your poops until you're in that sleep-time diaper. But you pee on the potty like a boss and we love it!



You know, being 3 has its difficulties too. You really don't like it when things don't go your way, or when we have to tell you no. And if your brother tries to get involved when you're concentrating on a toy or task, emotions fly high. But overall, you do make this life pretty easy on us.


Bud, it's a pleasure to be your mom. Thanks for filling our days with love, laughter, and wonder. We couldn't imagine our family without you. Thanks for being you, kiddo!

For John Paul's 3rd birthday, we decided to skip the party and plan a trip instead! We knew he'd LOVE to ride on a Thomas the Train, so I did some internetting and found Thomas was going to be just a few hours away in Chattanooga the day after John Paul's birthday! It was fate! So we planned a long weekend out of it, booking a nice Airbnb apartment just outside of downtown, and filling time with fun activities and yummy restaurant adventures. John Paul's aunt, uncle, and 1-year-old cousin joined in on the fun too!

On our first full day (John Paul's actual birthday) was spent at the Chattanooga Aquarium. And it really was a full day! We started there right after they opened, took an afternoon break for lunch and naps, and then went back to finish exploring. Lots of great pictures to be taken . . .







For dinner, we found a pub near the old Chattanooga choo-choo, so before dinner, we explored the old train and several old train cars. They're not in operation anymore, just on display for tourists and train enthusiasts to enjoy. Some of the old train cars have been converted into shops, and one was even a bar! We didn't stick around for long, but John Paul LOVED this short train adventure.



After dinner, we had cake back at our rental apartment. We just picked it up at Whole Foods when we arrived in town. Birthday boy was thrilled to pick the flavor: strawberry. Easy peasy.



The next day, there were many more train adventures to be had. In the morning, John and the boys got to ride a funicular train 1 mile up the side of a mountain! John Paul loved it so much, he's still talking about it months later. And then in the early evening, we finally got to meet and ride Thomas! John Paul was totally in train heaven. I have this sweet video of him saying (totally unprompted), "Eeeeeee! I'm so happy!" while we road Thomas. It was precious. Oh, and he got his first slush puppie, so he was basically on cloud 9.

Our Asheville Babymoon

To celebrate the upcoming arrival of the newest little Baby Schweitz, John and I got away for a night for a short babymoon in Asheville, NC. And it was awesome!

When my mother-in-law and father-in-law suggested we do an overnight away so they could practice watching John Paul through the night (since they're gonna be doing it again when we go into labor and baby makes an arrival!), we were completely on board. It was going to be our first night away from John Paul ever, but we figured we needed to try it some time. And thankfully it just so happened to be around the time we were hoping to go on a babymoon. I was 32 weeks pregnant, which seemed like about the latest we should be traveling. So it worked perfectly. Win win!

We decided very easily on Asheville, NC. It's only about an hour from where we live and it's jam packed with fun things to do and good things to eat. So we figured it would maximize our adventure time while keeping our travel time to a minimum. When you only have 24 hours for a trip, that's the way to go!

We said our goodbyes to John Paulie (ugh, my heart) around 10:30am and drove straight into town for a most delicious lunch at a Lebanese place called Gypsy Queen.


I enjoyed their house tea, while John enjoyed his first-ever Lebanese beer. We ate way too much, including their Lebanese fries (fries smothered garlic aioli and tahini dressing, sprinkled with parsley . . . mmmmm), baba ganouj (smoked eggplant dip), and a kibbeh wrap (the national dish of Lebanon!). We were so full, we basically had to be rollllled out of there.

From there, we drove a few quick miles into downtown Asheville for a relaxation appointment at the Asheville Salt Cave. I wanted to do some sort of special-to-Asheville activity while we were in town, and this strange yet intriguing manmade cave of salt exactly fit the bill.

For $25 a pop, we both got to sit in this salt cave for an hour and breathe in the calming, healing salty air. You can read all about the benefits on their website if you're curious. I just thought it was something neat to do. And it was! Gosh, I feel relaxed again just looking at that picture.

After the salt cave, we wandered around downtown Asheville on foot, popping in and out of shops, and taking in the hippy vibes that make Asheville, well . . . Asheville.


We made sure to stop at a shop called Bathe, just as we had on our Eureka Springs babymoon, pre-John Paul. Just a few days before our Asheville babymoon, we ran out of the lavender bath salts we had purchased on the Eureka Springs babymoon at the Bathe store there. It was totally fate.

At Bathe, you pick the product you want (hand lotion, scrubbing salts, beard scrub . . . ) and then, using approximately 100 different scents, combine to make your own unique scent for the product. It's pretty neat. We created a sandalwood tobacco and vanilla salt hand scrub and lavender bath salts. As we checked out, we mentioned to the cashier that we had enjoyed visiting their shop in Eureka Springs (I believe the only other one) and she said we were the first people she met who'd been to both shops! Woohoo, achievement unlocked!

Following Bathe, we continued adventuring for a while until we stumbled upon a kombucha bar, AKA quintessential Asheville joint. I was thrilled to discover they serve kombucha flights!! When you can't drink booze (because pregnancy), but you find something that sorta mimics the fun things about booze, you do a happy dance.


In case you're not in the know, kombucha is fermented tea. It's a little fizzy, a little vinegary, and a lot of fun. I actually brewed it at home for a few months. And then I got pregnant and it lost its appeal. But I totally intend on picking up the brewing habit again. It's chockfull of so-good-for-you probiotics, so you really can't go wrong.

The flavors I tried, all made by Buchi Kombucha, were . . .

Fire -- cold pressed ginger + cayenne + spices (what?! too spicy)
Water -- elderberry + blueberry + coconut water (my fave!)
Earth -- roasted roots tonic (tasted like rootbeer . . . meh)
Sovereign -- ginger + peach + molasses (second fave!)
Avonlea -- orange + mango + sea buckthorn
Holiday -- cinnamon + cider + vanilla + clove

We decided we needed a little break following all the downtown adventures, so we headed to our hotel to check in. We didn't stay anywhere fancy. Just a regular ol' Baymont Inn & Suites. We figured it was best to save a little cash on our hotel so we could really go all out on a fancy adventure a little later in the evening.

(Hold your horses, I'll get there!)

After some quick R&R, we headed south south south of Asheville to a Korean restaurant for dinner. We figured heading away from downtown Asheville on a Saturday evening was a smart choice. Good thing this city is so cool that super delicious restaurants can be found still several miles outside of downtown.

We considered tons of different cuisines, but Stonebowl Korean won out, simply because (1) the pics on yelp made me salivate and (2) we don't have any Korean food restaurants near home. Easy choice.


We split dumplings as an appetizer and ordered the beef bi bim bop for dinner. It came with all these fun side dishes. And the bowl arrived at our table snap, crackle, poppin'! The stone bowl was hot hot hot, so the ingredients inside continued cooking while we enjoyed. It was all fantastically delicious AND fun! 5 out of 5 stars! Would recommend! *thumbs up emoji*

And from there, we headed to the main event . . . Christmas at Biltmore! This was our maj splurge during our babymoon, and it did not disappoint.

The Biltmore is a ridiculously huge mansion set in the beautiful mountain scenery of western NC. This crazy estate, finished in 1895, sits on over 10 square miles, and the house has 250 rooms, including 33 bedrooms for family and guests, 43 bathrooms (what even?!?), 65 fireplaces, an indoor pool, and a bowling alley. It's like Downton Abbey on steroids. Need I say more?

Our admittance time wasn't until 8:45pm because they were already pretty booked by the time I got our in-advance tickets. So we spent some of our extra time wandering through the gift shops and drinking hot chocolate in the cold. It was pretty romantic. 

We were finally allowed into the house and, guhhh, just breathtaking, guys!

I had to take a moment to pose in front of the largest decorated indoor Christmas tree I think I've ever seen. It was in their banquet hall, which has 70-foot-high barrel-vaulted ceilings. Umm, tall much?


We also needed a selfie at the bottom of the massive 4-story spiral grand staircase. 


But seriously, it was gorg. The whole thing. It was all decked out for Christmas and they had professional musicians set throughout the house singing and playing classical Christmas tunes. So many happy feels.

We explored for about an hour, maybe more, then decided it was time to say goodbye to the crazy life of wealth and excess and head back to reality.


Our hotel room randomly had a hot tub in it. Like, attached hot tub room for two. It was a little weird and out of place, but wait . . . why am I complaining? We used our newly purchased lavender Bathe bath salts and relaxed in the tub for a tiny while. But then, like the old farts we are, we got super tired and realized we neeeeeed sleeeeeep. So sleep we did!

We totally failed at using this overnight away from our toddler to sleep in (doy.), but we had to squeeze in breakfast and Mass and a trip to Trader Joe's before getting home in time, so we didn't really have a choice. The good news is, we spent our non-sleeping time on so many adventures that missing out on the extra sleep felt totally worth it. :)

Breakfast was at Biscuit Head, a breakfast joint that specializes in creating crazy delicious biscuit dishes.




John got a brisket biscuit (YAS!) and I played it simple with an egg, cheese, and bacon biscuit, plus a side of their homemade yogurt with granola. I also raided their jam and butter bar, as evidenced by the 8 little containers of jam and butter laid across the table in front of John. That didn't even cover half of the available flavors. That jam bar was my JAM!

We sat around a bit to digest the biscuit bombs in our bellies and to wait out the 1-hour-before-Communion fast, and then headed into downtown Asheville one last time to attend Mass at the Basilica of St. Lawrence!

Mass was just lovely. It was the first weekend of Advent, and the Deacon gave a fantastic homily, reflecting on a much more realistic version of the Nativity than we typically hear or see.

And since we can't go to Asheville without a stop at Trader Joe's, we headed straight there after Mass to wander the aisles and aimlessly by all the things we don't need but looked too tasty to leave behind. (TJ's, if you're listening, PLEASE COME TO EAST TENNESSEE! PUH-LEEZ!)

We squeezed in a trip to a neat little coffee shop, sorta en route to the highway, Liberty House Coffee & Cafe, and I tried my first London Fog: earl grey tea with honey and almond milk. Mmmmm. They had these ridiculously huge pumpkins on their front porch, which I obvi needed to pose with.


And from there, we headed straight back to good ol' east TN, refreshed from all our fun and adventuring, but ready to see our little John Paul again. 

'Twas perfect.

Where Have You Been, Missy??

It seems I've fallen off the face of planet earth. But actually, no I haven't! I'm still here, doing all the things. To put it lightly, things have been . . . busy. Let me explain. No, there is too much. Let me sum up.


--one--

Learning how to teach plus then teaching the Creighton Model has been a whirlwind. Whew! But just last month, I wrapped up my 13-month training with a big fat 4-hour final exam. It was a doozy. Also awkward, since it was proctored by the only person in town I could find to proctor -- a male librarian. I had to present the picture dictionary to him. *insert embarrassed face here* That aside, I felt pretty ok after I finished it, so I'm thinking I passed, but I should find out by the end of April. Fingers crossed, prayers said! 

I've LOVED working with clients and am looking forward to continuing that without supervision now. Wahoo! If you know of anyone interested in learning CrMS, please feel free to send them my way. :)

Leading up to Christmas, I participated in my first saint peg doll swap. Have you seen these yet? They seem to be making their way around the Catholic bloggiesphere. You paint 20-30 of the same saint for the swap and get 20-30 different ones back (or however many people are participating). It's a great way to learn about a bunch of saints AND get your craft on at the same time. Plus, they make great toys AND Catholic learning tools for little ones.

Within a few days of me receiving my 30 new saint dolls, I was already itching to do another one! So with the help of Katie and Cecilia, we organized a special group of gals who've experienced infertility, miscarriage and/or stillbirth and are together making a set of 20 saints who are patrons of those sufferings. So, so special.

I just shipped off my St. Philomena dolls . . .

. . . and should be receiving the new set in time for Easter. Most of the saints came from this patrons-of-infertility list.

I'll be sure to post pictures once they arrive.

Though, to hold you over, I've got a pic of two saints my husband painted! He wanted in on the fun after seeing me paint over 50 saints myself. He had to tell me which saints he painted because sometimes I'm clueless. Can you guess?


--four--

I wouldn't be me if I didn't waste stupid amounts of time watching silly things on the telly. So, recent favorites have been:

Call the Midwife -- So many babies being born! And an infertility/adoption story!
Downton Abbey -- HOW IS THIS OVER?! At least the ending left me with all the good feels.
Jane the Virgin -- Funny and clever, but getting less appropriate by the episode. :-|
Fixer Upper -- We blew through the only season on Netflix. GIMME ALL THE SHIPLAP!
The Property Brothers -- Just yes.
Married at First Sight -- I know it's terrible that I watch this. But I really want all the best for these couples! And I love watching people fall in love. Sigh. Why are the outcomes so bad?


--five-- 

In early February, John surprised me with a trip to The Harry Potter Wizarding World in Orlando!! He knew it was on my bucket list and one night in January, he arranged all the details on the internets by himself and BOOM. Surprise bucket list trip for us! My MIL joined in too to help out with John Paul. It was the best trip EVA!









I have to say, Universal is sooooo accommodating to families! Every ride has a child-swap room so that parents can wait in line together and then when you get to the front of the line, one hangs in the swap room with the kiddo while the other rides, and then once that parent is done, the parents swap! Easy peasy. There's also a building with rooms for breastfeeding moms, so I totally took advantage of that. We stayed, very affordably, at one of the Universal hotels, which included shuttle service to the parks every day. And, sigh, it was just awesome.


Favorite parts: buying a wand and casting interactive spells with it around the parks, drinking 4 glasses of butterbeer *drool*, walking through Hogwarts Castle, eating lunch at the Leaky Cauldron, and discovering Diagon Alley. The coolest.


--six--

So this is a big deal . . . we're house hunting! For the first time ever, we're ready to buy a home. We've seen about 15 houses and even put an offer on one! But the sellers decided to stay in their home right after our offer came in. Bummer. The good news is . . . we're in no rush. We could stay in our apartment for another year or so just waiting for the perfect house. So there's that. But the search continues. (And gosh, it's kinda a full time job!)


--seven--

Best of all the things keep me busy . . .

Can you believe I have a 10-month-old?!

Guys, he's just the sweetest, most hilarious kid ever. He loves exploring, pulling up on everything, pulling all the things off all the shelves. He LOVES the kitchen -- the dishwasher, the cabinets, the refrigerator, the oven drawer -- what's not to love? He eats all the things. New favorites include raisins, baba ganoush, blueberries, blackberries, watermelon, and my mom's chicken parm. He even likes semi-spicy curry dishes! He doesn't like sitting still for long, and sweet cuddly moments are hard to come by. But he's just a hoot. I can't get over the sounds he makes or the cheesy smiles or the way he hides his face in my shirt if he's being shy. Guh. This kid. What a blessing!
